This is a wonderfully autumnal dish which combines the fruity colour of summer and one of my favourite rich cheeses! This recipe is perfect for using up the last of your summer fruits, and the mix of blue cheese, honey and blueberries gives way to a new season of eating. I'm searing the peaches on a hot griddle pan to create the fabulous charred lines. The peaches are topped with stilton and blueberries before being popped in the oven to bake for five minutes, the result is a gooey mix of savoury and sweet which you won't be able to stop eating!
Makes 6 peach halves
6 doughnut peaches
Honey, for drizzling
Punnet of blueberries
Preheat the oven to 200C fan.
Halve the peaches and discard the stones.
Heat a griddle pan over a high flame and grease with butter. Once hot position the peach halves and sear for 2/3 minutes on each side, or until the fruit begins to soften and the charred lines appear. You may need to do this in batches.
Transfer the peaches to a baking tray. Crumble over the stilton and sprinkle the blueberries. Pop in the oven for 5-7 minutes, until the cheese has melted and the blueberries begin to burst. Serve immediately with a drizzle of honey.
