Sesame, Honey & Lime Chicken Skewers

These grilled chicken breast skewers are marinaded in lots of punchy Asian flavours and served with a spicy peanut sauce, guaranteed to satisfy! It's really important that chicken breast doesn't become dry while cooking, so the marinade acts as a 'moist maker' and the skewers are grilled quickly on a high heat to ensure maximum juiciness! I've reused my recipe for spicy peanut sauce from the soba noodle salad, it works so well with the chicken while creating a completely different dish.
Serves 2-3
Ingredients for the chicken
600g chicken breast, diced
3 tbsp lime juice
3 tbsp toasted sesame oil
1 tbsp honey
1 clove of garlic, minced
Fresh coriander, to serve
Red chilli, to serve
Ingredients for the spicy peanut sauce
4 tbsp crunchy peanut butter
1 tbsp soy sauce
1 tbsp toasted sesame oil
1 tbsp rice vinegar
1 tbsp honey
1 tbsp water
Juice of half a lime
2 tbsp Sriracha sauce, or to taste
1 clove of garlic
Instructions
To prepare the chicken, whisk together the lime, sesame oil and honey. Add the diced chicken to the marinade and give the mixture a good stir to coat thoroughly. Cover and refrigerate for at least 30 minutes and up to 1 day.
While the chicken is marinating, whisk together all of the ingredients for the peanut sauce. Add more water if the mixture is too thick.
Turn the grill onto a high heat and thread the chicken pieces onto skewers. Place the skewers under the grill and cook for a few minutes on each side, until the meat is browning and cooked through.
Serve immediately with a sprinkling of coriander, fresh chilli and, of course, the spicy peanut sauce.
