Halloumi Wrap with Zaatar & Pomegranate

Halloumi is such a great cheese, squeaky, salty & hot! It acts as a fantastic base to any vegetarian meal and in this instance is serving as the star to my wrap. Although it's not traditional, Middle Eastern flavours like zaatar and pomegranate molasses team really well with our salty cheese, acting like a more structured feta, if you will! This is an easy and fun meal to prepare, especially for more casual al fresco dining, you could even grill the halloumi and pita's on the barbecue for a rustic feel.

Ingredients for the wrap
250g halloumi, sliced into 8 fingers
1/4 tsp chilli powder
1/4 tsp smoked paprika
Circular pita breads
Pomegranate seeds
Pomegranate molasses, for drizzling
Small bunch of mint, chopped
Ingredients for the zaatar yogurt
100g natural yogurt
1 tbsp zaatar
Zest of half a lime
1 tbsp lime juice
Instructions
Start by combining all the ingredients for the zaatar yogurt and stir until smooth. Taste for seasoning then put to one side.
Mix together the chilli and paprika in a bowl and then sprinkle over the halloumi. Rub the spices into the cheese to make sure every side is coated.
Cook the pita breads and wrap them in a tea towel to keep them warm.
Heat a frying pan over a medium heat and add the halloumi to the dry pan. Cook for a minute or two, until the pieces start to brown and crisp, turn and cook the other sides. When all the sides are done transfer the halloumi onto a chopping board.
To assemble the wraps, take a pita bread and spread on the zaatar yogurt. Load with the halloumi and pomegranate seeds, drizzle on the pomegranate molasses and sprinkle with the fresh mint. Serve immediately and enjoy!
