Rainbow Detox Salad with Orange Zest Dressing

Summer is full of big weekends, holidays and BBQ's; so much so that weekdays become the 'repair' days to get us feeling and looking our best before we do it all again! This salad focuses on skin health, all the ingredients are loaded with vitamins to have you glowing again in no time! You know I can't stand a lone piece of lettuce, so although I'm using healthy words like 'vitamins' and 'detox', this salad is far from boring. The mix of leaves, vegetables, nuts and seeds incorporates lots of textures to make this a satisfying meal, even the dressing packs a zesty punch! Don't take my word for it, try it and see for yourself...you can even have a couple of squares of hydrating dark chocolate for pudding!

Serves 2

 

Ingredients for the salad

50g spinach 

50g rocket

4 spring onions, finely sliced

1 carrot, shredded

6 radishes, finely sliced

Half a cucumber, shredded

1 avocado, diced

2 tbsp walnuts, roughly chopped

2 tbsp sunflower seeds

2 tbsp pumpkin seeds

50g feta, for sprinkling

 

Ingredients for the dressing

6 tbsp olive oil

1 tsp honey
Zest of an orange 

1 tsp Dijon mustard

Juice of 2 lemons

A small bunch of herbs such as parsley, coriander or basil

Salt & pepper

 

Instructions

To make the dressing, place all of the ingredients, excluding the herbs, in a jar and shake to combine. Taste for seasoning, then add the herbs and shake again. Set to one side.

 

Place the spinach, rocket, carrot, beetroot, cucumber, tomato and avocado in a large salad bowl and drizzle with some of the dressing. Toss to coat the salad. Now sprinkle over the seeds, nuts, chickpeas and feta. Serve immediately with extra dressing.
