Asian Style Steak & Herb Salad

There aren't many things better than steak right?! Well, the steak I've used from Bayley & Sage is out of this world! The Aberdeen Angus herd roam the pastures on Corwen, Wales, which are sown with a selection of herbs and grasses which all contribute to the award winning taste and flavour of the meat. The sirloin cut I used in this recipe was hung for 28 days and the strong taste of a good steak is unmistakeable. It's getting to the time of the year where steak and mash seems a little heavy so I wanted to create something fresh but still incredibly meaty! This Asian inspired salad has summer written all over it, it's colourful, light and has a good dose of heat! The salad and herbs I've used are of the freshest quality, you can really taste the difference when using the organic, specially picked produce from Bayley & Sage. 

Serves 3-4 people

 

Ingredients for the salad

500g sirloin steak, I used the Rhug Estate

1 tbsp toasted sesame oil

1 tbsp sesame seeds

1/2 tsp cayenne pepper, optional (if you like it super hot!)

100g pea shoots

50g coriander, leaves removed and torn

50g mint, leaves removed and torn

2 carrots, peeled into ribbons

1 red chilli, thinly sliced

1 shallot, thinly sliced

Salt & pepper

 

Ingredients for the dressing

3 tbsp chilli jam, I used Tracklements

2 tbsp soy sauce

2 limes, juice of 

1 tsp cider vinegar

1 tbsp toasted sesame oil

 

Instructions

Before starting make sure the steak is at room temperature. Lay on a chopping board and rub with a mixture of sesame oil, sesame seeds, cayenne pepper (if you are using), salt and pepper. Heat a pan over a high flame and once the pan is very hot add the steak. Sear the meat for 2 minutes on each side, or longer if you wish. Remove the steak from the heat and cover with foil to rest while you prepare the salad.

 

Whisk together the ingredients for the dressing. Toss the pea shoots, coriander, mint and shallots in a bowl then divide between plates. 

 

Slice the steak and lay on top of the salad. Spoon over the dressing and sprinkle with extra fresh chilli. Serve immediately and enjoy!
