Heirloom Tomato Caprese with Crushed Berry Dressing

Nothing says summer like a heirloom tomato salad, the colourful appearance and ripe aroma is a fantastic treat for any dinner table! For a modern twist on the Italian staple salad 'caprese', I've used burrata instead of mozzarella. Burrata is such a beautiful cheese, light yet intensely creamy, it teams so well with the sweet smelling tomatoes. To finish I've made a tangy crushed berry and basil dressing, the berries bring a sharpness to the salad which helps to balance the sweetness of the tomatoes and cheese. This is a simple, easy to prepare salad, perfect for these hot summer days.

Serves 2

 

Ingredients for the salad

1kg heirloom tomatoes, sliced

200g burrata, torn 

5 basil leaves, to serve

Salt and pepper

 

Ingredients for the dressing 

3 tbsp olive oil

1 tbsp red wine vinegar

1 tbsp pomegranate molasses 

100g mix of raspberries & strawberries

A small bunch of basil, finely chopped

 

Instructions

On a serving plate, arrange the tomatoes, mixing all the colours and seasoning with salt and pepper.

 

In a small bowl, whisk together the olive oil, vinegar and pomegranate molasses. Crush the berries into the dressing using a fork, then add the chopped basil. Scatter the torn burrata over the tomatoes and drizzle over the dressing, serve immediately with the basil leaves for extra decoration.
