Crab Toasts with Chilli, Lime & Coriander
Crab is one of my favourite shellfish (let's face it, I like them all!), it's light and has a naturally flakey texture which I love. So much so that I had to create a summer dish perfect for a brunch, lunch or even a light dinner. The delicate, sweet flavour of the crab team so well with Asian tastes like lime, chilli and coriander. This is a ridiculously easy recipe but trust me it holds it's own!
Makes 4 toasts
200g white crab meat
2 tbsp lime juice, plus extra
1 small red chilli, finely chopped
A small bunch of coriander, finely chopped
1 large spring onion, finely chopped
3 tbsp natural yogurt
2 tbsp mayonnaise
4 pieces of sourdough
Pea shoots, to serve
Salt & pepper
Whisk together the natural yogurt, mayonnaise and lime juice. Add the crab meat and mix until combined with the sauce. Finally stir through the spring onion, coriander and red chilli, seasoning to taste.
Toast the sourdough, then top with the crab mixture and some pea shoots. Serve immediately and enjoy!
