Banana & Yogurt Ice Lollies
I don't care how old you are, you are going to love these banana and yogurt ice lollies! I don't know about you but I really struggle with my 4pm food cravings. I don't want to end up with a bar of chocolate in my hand (ok I do a bit!) but I also look at the carrots in my fridge with such disdain. These banana and yogurt ice lollies are the perfect for curbing the sugar cravings and they taste absolutely delicious! I'm actually not a fan of straight banana or even the raw mixture of this recipe but I LOVE it frozen, I feel like I'm eating an ice cream! If you really want a proper sugar hit you can be naughty like me and melt chocolate chips to drizzle over and even add your choice of toppings; I used goji berries and crushed pistachios to make mine a little more special as I had company!
Makes 6 lollies, depending on the size of your moulds
1 very ripe banana
180g natural yogurt
1-2 tbsp honey, depending on how sweet you like it
Chocolate chips, optional
Crushed pistachios, optional
Goji berries, optional
On a chopping board mash the banana until it's smooth. Transfer to a mixing bowl and add the yogurt and honey. Stir until completely combined.
Spoon the mixture into the moulds and pop straight into the freezer.
When the lollies are ready, remove from the freezer and leave to stand while you melt the chocolate chips. Now the lollies should easily slide out of their moulds. Place them on a serving plate, drizzle with the chocolate and sprinkle with the toppings. Serve immediately and enjoy!
