Chicken, Artichoke & Courgette Skewers with Herb Dressing

These chicken, artichoke and courgette sticks are perfect for the up coming

summer, I'm absolutely loving the fresh colours and flavours! It can be tricky to know how to prepare and serve artichoke, this recipe uses tinned artichoke hearts so it's no fuss and ever so easy. The chicken is coated in a zesty, mustardy sauce and the sticks are served with a tangy herb dressing. Not only are skewers a fun way to serve food without spending lots of time in the kitchen, you can also hide lots of vegetables among the layers which makes them perfect for veggie phobic little ones!

This is a 20 minute meal which can be whipped up in one go or prepared in advance if you have people coming over. They are BBQ friendly and will really jazz up your chicken option this summer! Serve with a big salad.

Makes 8 skewers

 

Ingredients for the skewers

600g skinless & boneless chicken thighs, cut into 24 pieces

1 large courgette, cut into 24 pieces

1 tin of artichoke hearts, drained & halved

2 lemons, halved and cut into 16 pieces

Zest of half a lemon 

3 garlic cloves, minced

4 tbsp olive oil

1 tbsp wholegrain mustard

Salt & pepper

8 bamboo sticks, soaked

 

Ingredients for the herb dressing

2 tbsp chopped parsley

2 tbsp chopped coriander

2 tbsp chopped basil

4 tbsp olive oil

Juice of half a lemon

Pinch of chilli

Salt & pepper

 

Instructions

Start by placing the chicken and courgette in a mixing bowl. Add the olive oil, lemon zest, garlic, wholegrain mustard and season well. Mix until everything is coated in the mixture. If you are making these in advance now would be a good time to cover and refrigerate for up to 24 hours.

 

Turn the grill onto high. 

 

While the grill is heating up, take the bamboo skewers and begin to assemble; on each skewer you should have 3 pieces of chicken and courgette, and 2 pieces of artichoke and lemon. Place the assembled skewers on the grill pan and pop under to cook for around 5-6 minutes on each side, turning when browned and sizzling. 

 

While the skewers are cooking you can make the herb dressing. Place all the ingredients in a food processor and blitz until you have a rough textured, oily dressing. 

 

Place the cooked skewers on a plate and drizzle with the dressing to serve.
