Fritters are extremely quick and easy to make and you can put just about anything in them which makes them perfect for using up bits in the fridge! I had a courgette and pepper hanging around so I decided to grate them up and team them with deliciously salty halloumi. Halloumi is a fantastic cheese, it's versatile and creates a lovely meaty texture so it worked really well to beef up my vegetarian fritters. I fried the fritters and served with a big salad, pita bread and chilli jam. This is a perfect weekend night dinner that will satisfy even the most devoted of carnivores!
Makes 8 fritters
250g halloumi, grated
1 red pepper, grated
1 courgette, grated
3-4 tbsp breadcrumbs
2 tbsp coriander
Pita breads, to serve
Chilli jam, to serve
Put the grated courgette and pepper in a sieve and sprinkle with salt. Leave it to stand over a bowl for 5 minutes to draw some of the moisture out. Tip the vegetables into a clean tea towel and wring out the excess liquid.
In a bowl, mix together the strained vegetables, coriander and halloumi. Season with black pepper then add the egg and breadcrumbs. Combine until you have a sticky mixture, adding more breadcrumbs if necessary. Mould the mixture into 8 fritters and place in the fridge for 20 minutes to firm up.
Once the fritters are ready, heat a large frying pan over a medium heat. Add a splash of olive oil to the pan, once hot fry the fritters until golden and crisp.
Serve immediately with hot pita bread, salad and lashings of chilli jam.
