Chicken & Veggie Burger with Chipotle Sauce

Burgers have this awful stigma attached to them, but I for one believe you can enjoy a delicious burger guilt free and fully satisfied! Ok, so it's not dripping in cheese, but it does have a meaty patty, spicy chipotle sauce, and creamy avocado. Enough to impress the burger connoisseurs of this world? You decide! Hidden in the chicken patty is coarsely grated courgette and a good handful of peas so you're definitely helping towards your five a day! The chipotle sauce is made with creamy natural yogurt and has adds just enough spice to keep things interesting. Don't take my word for it, try it!

Makes 2 burgers


1 large chicken breast or 2 small ones

1/2 courgette, coarsely grated and wrung out in a tea towel

60g frozen peas

1 egg yolk

1 tsp paprika

Salt & pepper

Half an avocado

4 rings of red onion

3 tbsp natural yogurt

2 tsp chipotle paste, or to your taste

2 buns, wholemeal or seeded

Salad of your choice, I used spinach


Preheat the oven to 200C fan.

Place the chicken in a food processor and blitz finely chopped. Empty the chicken into a large mixing bowl and then had the courgette, frozen peas, egg yolk, paprika, salt and pepper. Combine thoroughly using your hands then shape into burger patties.

Heat a large frying pan with a splash of olive oil over a medium/high heat. Once hot sear the burgers for 2 minutes on each side or until browning. Transfer the burgers onto a baking tray and pop in the oven for 8-10 minutes or until cooked through.

Meanwhile, mix the natural yogurt and chipotle paste to create that delicious sauce. Next mash the avocado and slice the burger buns in half, spreading a good helping of sauce on each.

Once the burgers are ready plonk the burger on the bun and pile of the avocado, onion and salad. Serve immediately and enjoy!
