Seared Tuna Tacos with Avocado and Mango Salsa

These seared tuna tacos are meaty, fresh and colourful! This meal can be thrown together in 10 minutes but to me it feels really special, the flavours say it all! It's really important to buy the best quality tuna you can for maximum flavour and freshness, I bought mine (on sale!) from Wholefoods. The tuna steaks take very little time to sear so the majority of the work, which isn't much, is in the tangy avocado and mango salsa. I diced the main ingredients then mixed with jalapeños, red onion, coriander and lime juice to create a light and chunky salsa. This is a real winner of a dinner if you fancy something quick and light but bursting with flavour.
Makes 8 tacos
Ingredients
2 tuna steaks
Half a mango, diced
1 avocado, diced
Half a red onion, diced
Jalapeños, finely chopped, add to your taste (I used 1)
Small bunch of coriander, finely chopped
1 lime
Salt and pepper
Ground nut oil
8 soft tacos or mini tortillas
Instructions
To prepare the salsa, place the mango, avocado, red onion and jalapeños in a bowl and gently toss. Add the coriander and the juice of the lime, toss again.
Place a large pan over a high heat with a little ground nut oil. Sprinkle the tuna steaks with salt and pepper on both sides. When the pan is hot carefully place the tuna in to cook. Sear until crispy and it is cooked a quarter of the way up, turn and repeat. This should be a very quick process.
Once the tuna is done leave to rest on a chopping board while you heat the tacos.
Lastly, slice the tuna and then start filling your tacos! Enjoy!
