Tandoori Chicken Bites with Mint Raita

I LOVE tandoori cooked meats and wanted to create something a little different and healthy which I could enjoy at home. These mini bites are made from minced chicken, tandoori paste, chilli, turmeric, coriander, garlic and ginger. The ingredients are all fresh and the chilli spiced paste is a perfect way to set your metabolism on fire! The bites are baked instead of fried and then served with a fresh mint raita and mango chutney. They are brilliant as a snack or alternatively you can serve with chapatis or flatbreads to make a lovely Indian inspired sandwich, perfect for a lunch or light supper.
Makes 18 bites
Ingredients for the bites
500g chicken or turkey mince
4 tsp of tandoori paste
1 red chilli, finely chopped
2 tbsp natural yogurt, I used Yeo Valley
2 garlic cloves, minced
3cm piece ginger, grated
2 tbsp finely chopped coriander
1 generous pinch of turmeric
Ingredients for the mint raita
150g natural yogurt, I used Yeo Valley
2 tbsp fresh mint sauce
2 tbsp finely chopped coriander and mint
A pinch of turmeric
To serve
Mango chutney
Chapatis or flatbreads, optional
Instructions
Preheat the oven to 180C.
Place all of the ingredients for the bites in a bowl and combine using your hands. Roll into 18 balls, place on a baking tray and pop in the oven for 20-25 minutes or until cooked through and golden.
Meanwhile, place all of the ingredients for the mint raita in a bowl and stir thoroughly.
Once the bites are ready, arrange on a bed of coriander. Serve immediately with the dips and optional bread.
