Prosciutto, Pear and Blue Flatbread

This recipe is oh so simple but delivers on taste in minutes! It's perfect for a lunch or if you fancy something a little lighter for supper. I discovered these gorgeous Italian flatbreads by Crosta & Mollica in Waitrose which have minimal ingredients and taste fantastic. I've used prosciutto, ripe pears, Saint Agur and sorrel leaves for the filling. When you have good quality ingredients you don't need much more, but I've topped it off with an yogurt dressing made with olive oil, a squeeze of lemon, salt and pepper. It's simple but it's guaranteed to hit the spot!

Makes 2 wraps


2 flatbreads or wraps

6 pieces of prosciutto

Soft blue cheese, I used Saint Agur

1 very ripe pear

Salad leaves, I used lemony sorrel

2 tbsp natural yogurt

1 tbsp olive oil

Squeeze of lemon

Salt & pepper


Preheat the oven to warm the wraps.

Meanwhile make the dressing by combining the natural yogurt, olive oil, salt and pepper. Then squeeze in a little lemon juice and stir again.

Chop the pear into long strips and the cheese into small squares.

Once the bread is warm, divide onto plate. To assemble place a handful of leaves, a few pieces of pear, the prosciutto and cheese on top of the flat bread. Drizzle with the dressing and wrap up. Serve immediately and enjoy!
