Sweet Potato Toast with Goats Cheese, Cranberry and Pistachio

This is the easiest recipe in the world and it's great for breakfast, lunch, a snack or, specifically for this time of year, a canapé! Using sweet potato as a base instead of bread adds lovely colour to the dish and adds a much needed healthy boost. The sweet potato is topped with soft goats cheese, cranberry sauce and toasted pistachios. It's a must try this Christmas, especially if you need to use up the cranberry sauce!

Makes 6-7 circles



1 sweet potato, chopped into circular half inch pieces

A pot of soft goats cheese 

Cranberry sauce, homemade if possible

A big handful of pistachios

Olive oil

Salt and pepper



Preheat the oven to 200C. 


Place the circles in a baking tray with a brush of olive oil and a little seasoning. Bake for 20-25 minutes or until soft and starting to brown.


Meanwhile, crush the pistachios and place in a pan to toast. Put to one side.


When the sweet potato is ready, take out of the oven and allow to cool for a few minutes.


Now assemble by spreading a goats cheese, followed by a dollop of cranberry sauce, sprinkle with pistachios and you're done! Serve immediately and enjoy!
