Fruit and cheese is one of my favourite combinations and so I couldn't resist adding the beautiful summer strawberries to my goats cheese salad! The juicy fruit cuts through the rich cheese creating a satisfying but light dish. I've used spinach for my leaf base and added crunchy, toasted pine nuts for magnificent texture. Balsamic gives that extra zing to the salad, completing it perfectly with a drizzle of glaze. This easy, quick recipe is perfect for a light meal or as a colourful addition to your barbecue side salads. Just make sure you get the best quality ingredients as they will really shine through in this simple dish.
Makes 1 big bowl
200g good quality strawberries
125g baby spinach
30g pine nuts, toasted
75-100g soft goats cheese
Ingredients for the dressing
2 tbsp olive oil
1 1/2 tbsp balsamic vinegar
Balsamic glaze, for drizzling
Salt & pepper
Start by lightly toasting the pine nuts in a pan, take off the heat and set to one side to cool
Remove the stalk and slice the strawberries lengthways. Combine them in a salad bowl with the spinach and crumble in half of the cheese. Toss the salad to combine the ingredients.
Whisk together the olive oil and balsamic vinegar, adding more oil or vinegar to taste. Season and then pour the dressing over the salad, and toss again to coat the ingredients.
Transfer the salad onto plates or a serving dish. Distribute the remaining goats cheese evenly and sprinkle over the pine nuts. Finally drizzle over the balsamic glaze for extra zing! Serve immediately and enjoy!
